    "3 main ingredients"

    1. Beef
    2. Potatoes
    3..Vegetables

    Beef Stock
    Bay leaves
    Parsley
    Seasonings

    "2 popovers each"

    3 tablespoons melted butter, divided
    2 eggs
    1 cup milk, warmed for 30 seconds in the microwave (should be lukewarm to warm)
    1 cup all-purpose flour
    1 teaspoon kosher salt

    Pour batter into melted butter and bake at 400 degrees for 25 to 30 minutes.

    Cuddle up in front of the TV, turn on your favorite holiday movie and chow down.

  • Family "THYME"

    Don't just choose a holiday theme but go for a holiday themed menu using one or two special ingredients.

    This time around we chose THYME! Something there is never enough of with the ones you love.

  • Cornish hens stuffed with pepper and Thyme

    Pat dry your little birds, rub them down with butter, salt and pepper, then wrap them up tightly with pancetta and tuck in some lemon, peppers and thyme.

    Cook at 375 degrees for roughly one hour.

    Serve parmesan stacked potatoes with thyme along side these lovelies. Fully coat thinly sliced Yukon potatoes with butter, olive oil, parmesan and thyme. Bake at 375 degrees for 40 minutes in muffin tins.

  • Cornbread with apples, onions and thyme.

    For this festive version of cornbread we caramelized some sweet onions and pink lady apples, added the thyme, butter and sugar. Mixed half of the ingredients into the batter then layered the remaining on top. Baked at 400 degrees for 40 minutes.

    For the batter:
    1½ cups cornmeal
    1 cup all-purpose flour
    1 tablespoon baking powder
    2 large eggs
    1½ cups buttermilk

From Meatless Monday to Meaty Monday!

There is something so magical and special about a Christmas tree, home made bolognese, candles and red wine.

What you will need.........
Onions 
Garlic
Sweet peppers, red and yellow
Baby Bella mushrooms
Fresh tomatoes and a good spicy sauce
Parsley 
Oregano
Red wine
Ground turkey and pork
Any type of pasta will do.....

    Cook a Turkey Breast. Takes about 2+ hours!

    Save time and cheat on the sides, use store bought stuffing and cook an easy veg like squash casserole. This was an old time favorite from my Great Aunt Lila.

    Yellow squash sliced very thin
    Canned cream of mushroom soup mixed w/ heavy cream and milk just to thin out
    Fresh thyme
    Grated mozzarella
    Salt & pepper

Perfect little helpers. Lunch was delicious, now time for a nap!

  • Friday night lamb curry!

    My gorgeous Chef Allan whipped this up for Friday night date night.

    Every bite so delicious we had to find another variation. So what better way for a weekend treat than Sunday night pizza!

    Lamb, red onion,garlic,ginger,
    cilantro, spinach,
    jalapeño peppers,curry powder,turmeric power,ground clove,ground cardamom,tomato purée,coconut milk. In pressure cooker for 50 minutes.

  • Transformed to Sunday night pizza.....

    Take the easy road and use a store bought, roll out pizza dough.

    Depending on your preference roll out to thin or thick!

    For the base, roasted garlic and caramelized red onions.

  • Don't skimp on the dollop of RAITA. The perfect finish for this dish.

    RAITA is an Indian cucumber yogurt condiment. Cool and refreshing on your hot palate.

    Ingredients
    2 cups plain yogurt
    1 large cucumber, peeled, seeds removed, finely chopped
    3 tablespoons minced fresh mint leaves
    1/2 teaspoon salt
    1/2 teaspoon ground cumin
    1/4 teaspoon paprika
    Pinch sugar
    Pinch cayenne


Take me back Tacos.....

As a child Tacos were and still are one of my all-time favorite things.  The assembly process, using your hands and creating that perfect bite.
 
You can use beef, chicken, fish or even shellfish. The skies the limit baby!

Penne for your thoughts!!!

What could be easier than pasta for a meatless Monday dinner. Grab what is in your fridge and cupboard and go for it. In this case canned artichokes, mushrooms, onions, garlic, parsley, bottled spicy arrabbiata pasta sauce and shrimpies...............

Cook everything in one pan adding the shrimp at the very end with a nob of butter and little marsala wine. Once the penne pasta is perfectly al dente, toss together with shaved parmesan (optional) and volia, dinner is served!
