Forgive me father for I have sinned……it has been one minute since my last piece of pie and I confess I may just eat another!!!

Chocolate Cream Filling

7 ounces fine-quality bittersweet chocolate (not more than 70% cacao; not unsweetened), finely chopped
1 cup heavy cream
1 large egg, at room temperature for 30 minutes
1/2 cup toasted almonds, coarsely chopped
1/4 cup bitter-sweet chocolate chips, or peanut butter


4 large egg whites
½ cup granulated sugar
¾ cup powdered sugar, sifted
