Green Goddess Goodness

I have recently become obsessed with the color green.  My powder room has been transformed into a Costa Rican jungle and my furniture newly covered with splashes of rich green. Since all is green in my world I decided today to create a menu using only green goodness.

The color green represents life, renewal, nature, and energy, and associated with meanings of growth, harmony, freshness, safety, fertility, and environment. 

Green is also traditionally associated with money, finances, banking, ambition, greed, jealousy, and wall street.  Who knew a color could be all that!!

  • Leeks in Vinaigrette with Walnuts and Tarragon

    1 cup walnuts
    ½ cup extra-virgin olive oil
    Kosher salt
    6 large leeks, tough outer layer removed
    1 garlic clove, finely grated
    ¼ cup white wine vinegar
    1 tablespoon plus 1 teaspoon whole grain mustard
    ⅓ cup coarsely chopped tarragon
    Freshly ground black pepper

  • Oyster Bar Butter drizzled over smashed potatoes

    ½ cup (1 stick) unsalted butter, room temperature
    4 garlic cloves, finely grated
    2 teaspoons finely grated lemon zest
    2 tablespoons fresh lemon juice
    2 teaspoons hot sauce
    2 teaspoons Worcestershire sauce
    5 tablespoons olive oil, divided
    ⅓ cup chopped parsley
    ¼ cup chopped chives
    1 tablespoon chopped dill
    2 teaspoons chopped tarragon
    Kosher salt, freshly ground pepper
    3 pounds baby Yukon Gold or new potatoes, scrubbed
    1 bay leaf

3-Ingredient Creme Brulee Pie

Three easy ingredients.

1 prepared pie crust or ramekins
9 egg yolks
1 pint heavy whipping cream
3/4 cup sugar + 3 tablespoons sugar
1 tablespoon vanilla and or bourbon

Preheat oven to 325 degrees. In a large bowl, whisk together yolks, whipping cream, and 3/4 cup of sugar until well beaten. Pour into ramekins or a pie crust and bake for 50-55 minutes, or until the center is set (it won’t be set hard, still just a tiny bit jiggly, like the texture of jello). Remove brulees from oven and cool completely in the fridge. Just before serving, sprinkle the tops with sugar, turn oven to broil and place pie on the top rack of the oven under the broiler or use a kitchen torch to cook just until the sugar is caramelized and golden brown on top.
