Three generations making memories!  What better way to celebrate Christmas Day then with good food, good peeps and good memories.

Instead of the traditional turkey and stuffing we went with Beef Wellington and Smashed Potatoes.

  • Beef Wellington

    Sear the beef then prepare the mushroom and shallot spread.

    Mushrooms, shallots, cognac, heavy cream, salt & Pepper.

    Cook down, then spread evenly on the beef. Once puff pastry is rolled out wrap your tenderloin then cook for 35 - 50 mins for medium rare at 425 degrees.

  • Creamed Corn Casserole

    1/2 cup unsalted butter
    1/4 cup all purpose flour
    1/4 cup granulated sugar
    2 eggs, well beaten
    1 cup whole milk
    1 (15.25-oz.) can whole kernel sweet corn, drained
    1 (14.75-oz.) can cream-style sweet corn
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper

    Bake at 350 degrees for 1 hour and 15 mins.

  • Guava Duff

    If you don't have fresh guavas, guava jam and or guava slips work just as well.

    The dough is the toughest task!

This is where the drum-roll comes in! We managed to whip up a homemade steamed guava duff for the Carolina family. Delicious!!!!

Christmas Carolina Pork Served Jerk Stylie!

On our first evening at home in North Carolina we decided to bring in a taste of the islands and combine it with some down home Carolina flavors.  Believe it or not frozen conch travels well and is just as good in salad once it is thawed.  We just cannot start a meal without a little spicy salad.

Mac N Cheese Mimi Style

I love being home with the people I care for the most and enjoying our traditions, new and old and as the year draws to a close and a new one begins I reflect on all the things that I am grateful for and I know how incredibly blessed I am.

  • Allan's Conch Salad

    Celery
    Tomatoes
    Onions
    Limes
    Sweet Pepper
    Cucumber
    Goat Pepper

    No instructions needed!

  • Pork Butt

    Put your butt in the slow cooker for about 6 hours.

    Only thing you need to add is salt, pepper and water.

    Once done pull the pork apart and add your jerk sauce.

  • Mac n cheese Mimi Style

    1 pound of sharp cheddar
    1 small onion grated
    1 egg
    1 small can of carnation milk
    4 dashes of Tabasco
    1 stick of butter
    Bread crumbs

    Cook pasta, mix and bake at 350 degrees

Chop, blend then make a paste! It is that easy.
