Fall in line.....

My favorite time of year is Autumn.  I love the colors of fall and the flavors and the aromas of roasted veggies and hearty herbs.

Since this is also the month of giving thanks, I urge you all to show your appreciation for all you may have, whether it be allot or a little and pick a charity that speaks to you and offer your beneficence.  Giving comes in many forms not just money but also in your time and in your support.

I for one am thankful for all that even took the time to read this!!

Fresh Side Salads

Just because we are in the tropics we will stick with the colors of autumn but pair these dishes with a fresh salad of cantaloupe, green beans, mozzarella and a sprinkling of tarragon.

INGREDIENTS

  • ½ small cantaloupe or Honey Kiss melon (about 1½ lb.)
  • 8 oz. sugar snap peas, strings removed, thinly sliced on a diagonal
  • 8 oz. ricotta salata (salted dry ricotta), thinly sliced into strips with a vegetable peeler or mandoline
  • 3 Tbsp. tarragon leaves
  • Extra-virgin olive oil, lemon wedges, flaky sea salt, and Aleppo-style pepper
